As Thanksgiving approaches, many people will begin preparing for their big meal. It is one of the few holidays where families come together for something special. Yet, not everyone has days to prepare a gourmet feast. If you are running out of time and need something fast and simple to make, here are a few delicious recipes to follow.

One of my favorite desserts to make is apple crisp. This is a recipe straight from my grandma’s cookbook and takes about an hour to complete from start to finish. It can also be served with a scoop of ice cream for even more flavor! This recipe can easily be made the day before Thanksgiving and still taste amazing the next day.  Another tasty variation of this recipe is to substitute peaches (peeled and sliced) for the apples.

Apple Crisp   

Ingredients:

  • 6 medium apples
  • ¾ c. quick cooking oatmeal
  • ¾ c. brown sugar
  • ½ c. flour
  • 1 tsp cinnamon
  • ½ c. butter

Directions:

  • Pare and slice apples. Arrange slices in a pan.
  • Mix oatmeal, brown sugar, flour, and cinnamon into a bowl.
  • Cut in butter into the bowl with the oatmeal, brown sugar, flour, and cinnamon. Spread over the fruit.
  • Bake 35-40 minutes at 350°. Enjoy!

Another signature Thanksgiving food that is easy to make is cranberry relish. When paired with a roll or piece of bread, it can turn a seemingly bland food into something full of flavor. This traditional food may not be a kid’s top choice, but many adults enjoy it. It  can be made the day before Thanksgiving and takes about 45 minutes to prepare and refrigerate.

Cranberry Relish

Ingredients:

  • 1 pound fresh cranberries- chopped
  • 1 ½ cups sugar
  • 1 small package strawberry jello
  • 1 cup hot water to dissolve jello
  • 1 package Knox gelatin
  • 1 cup chopped nuts
  • 1 8 oz can of crushed pineapple, well drained
  • 1 cup chopped celery

Directions:

  • Mix the cranberries, sugar, jello, hot water, and gelatin together in a bowl.
  • Add the nuts, pineapple, and celery to the bowl and mix all the ingredients together.
  • Pour into a jello mold and refrigerate until set.

Many families enjoy eating potatoes with their turkey. A common dish to make is sweet potato casserole. This delicious side dish pairs well with the turkey and cooks quickly the day of Thanksgiving.

Sweet Potato Casserole

Ingredients:

  • 4 cups sweet potatoes, cubed
  • ½ cup white sugar
  • 2 eggs, beaten
  • ½ teaspoon salt
  • 4 tablespoons butter, softened
  • ½ cup milk
  • ½ teaspoon vanilla extract
  • ½ cup packed brown sugar
  • ⅓ cup all purpose flour
  • 3 tablespoons butter, softened
  • ½ cup chopped pecans

Directions:

  • Preheat oven to 325°.
  • Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender. Drain the water and mash the potatoes.
  • Mix together the sweet potatoes, white sugar, eggs, salt, butter, milk, and vanilla extract. Mix until smooth. Transfer to a pan.
  • In a medium bowl, mix the brown sugar and flour. Cut in the butter until it is a coarse mixture. Stir in the pecans.
  • Sprinkle the mixture over the sweet potato mixture.
  • Bake in the oven for 30 minutes, or until the topping is lightly brown.

If you are looking for another side dish, baked macaroni and cheese is for you! This dish goes well with the turkey, and offers a nice substitute in case you aren’t a fan of potatoes! This dish is best when made the day of Thanksgiving.

Baked Macaroni and Cheese

Ingredients:

  • 1 ½ cups dry elbow macaroni shells
  • 3 tablespoons butter
  • 3 tablespoons all purpose flour
  • 2 cups milk
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 cups of shredded cheese (cheddar)

Directions:

  • Preheat oven to 350°.
  • Boil a pot of water. Add the pasta to the boiling water. Sprinkle in salt.
  • While the pasta cooks, melt the butter in a skillet or large pot that can eventually hold the pasta.
  • Add the flour and stir over medium heat until it is lightly browned. (1-2 minutes)
  • Add the milk. Whisk to remove lumps. Add the salt and pepper.
  • Cook over medium high heat until the sauce thickens or starts to bubble. (Around 6 minutes)
  • Stir in the cheese and whisk until smooth and melted. Turn off the heat.
  • When the pasta is almost done but still firm, drain and add to the sauce.
  • Stir the pasta into the sauce. Bake in a greased pan (8×8) for 20-25 minutes until browned and bubbly.

Finally, for all the vegetarians who are looking for something to enjoy on Thanksgiving, this dish is for you! Green bean casserole is a great dish to have if you are looking to put another vegetable on the table. People of all ages can enjoy this scrumptious dish, and the best part is it only takes 25 minutes to prepare and cook the day of Thanksgiving!

Green Bean Casserole

Ingredients:

  • 2 cans green beans, drained
  • 1 can condensed cream of mushroom soup
  • 1 can French fried onions
  • 1 cup shredded cheddar cheese

Directions:

  • Preheat oven to 350°.
  • Place green beans and soup in a large microwave-safe bowl.
  • Mix well and heat in the microwave on high until warm (3-5 minutes).
  • Stir in ½ cup of cheese and heat mixture for another 2-3 minutes.
  • Transfer green bean mixture to a casserole dish (glass pan). Sprinkle with fried onions and remaining cheese.
  • Bake in the oven until the cheese melts and the onions just begin to brown.

With these simple and quick recipes, Thanksgiving can be less stressful and more enjoyable for everyone!
